Add strawberries, milk, cacao, yogurt and protein powder to a blender or food processor. Blend until smooth.
Add half of the chia seeds to a jar, bowl or glass along with half of the strawberry mixture. Mix until combined. Repeat with the other half of the chia seeds and strawberry mixture to make the second portion.
Refrigerate both portions of the pudding for at least 1 hour or overnight.
Top off chia pudding with yogurt, cacao nibs, strawberries and bee pollen if using.
