Baked Vegan Chickpea and Cauliflower Fajitas
Even though I cook for (part) of my living, I still love healthy and easy recipes. Especially during the week. When I want something quick, healthy and delicious I like to make baked fajitas. These Baked Vegan Chickpea and Cauliflower Fajitas are a delicious and healthy fajita recipe.

- Cauliflower
- Chickpeas
- Lime
- Maple syrup
- Oil
- Red onion
- Chili powder
- Cumin
- Garlic powder
- Salt
- Pepper
- Taco shells
- Avocado (optional)
- Lime (optional)
- Jalapeno (optional)
- Cilantro (optional)
- Salsa (optional)

Ingredients

This makes enough filling for 6-7 fajitas
Chickpea & Cauliflower filling
- ~2 cups cauliflower cut into small florets (from one small cauliflower)
- 1 can chickpeas
- juice from ½ lime
- 1 tsp maple syrup
- 1-2 tablespoon oil of choice
- ½ red onion - sliced
- 1 tsp chili powder
- ½ tsp cumin
- ½ tsp garlic powder
- 1 tsp salt (adjust to your salt preference)
- 1 tsp black pepper (adjust to your pepper preference)
+taco shells of choice - I like organic corn.
Guacamole (optional)
- 1 avocado
- juice from ½ lime
- pinch salt
- pinch black pepper
- ½ jalapeno - finely chopped with seeds removed
- 2 tbsp finely chopped red onion
- ¼ cup finely chopped cilantro
Optional Additional Toppings
- chopped red onion
- salsa
- fresh cilantro
- vegan cheese
Instructions
- Preheat oven to 425 degrees.
- Add chickpeas, red onion and cauliflower to a sheet pan lined with parchment paper.
- Toss chickpeas, cauliflower and onion in oil, maple syrup, lime juice and spices.
- Bake for 30-35 minutes.
- (Optional) While filling is cooking make your guacamole. Mash your avocado in a bowl and mix with the rest of your guacamole ingredients.
- After filling is done cooking, add to warmed taco shells. Top with your guacamole and/or other desired toppings. Enjoy!
