This Blended Pistachio Chia Pudding (high protein) is inspired by all of the pistachio treats I had in Italy. No, chia seed pudding does not compare to gelato, but it is an easy way to satisfy that pistachio craving.

This chia seed pudding is blended so it gets rid of the bumpy texture. I for one love the texture of chia pudding but some people don't and that is okay. This chia seed pudding has that unique and rich pistachio taste and is so good. I am obsessed.

Ingredients
- milk
- pistachios
- greek yogurt
- maple syrup or honey (optional)

Instructions to make thick and creamy pistachio pudding

- Add all ingredients to a blender and blend until smooth. This should take 1-2 minutes.
- Pour chia mixture into a jar or cup. Refrigerate for 1 hour.
- Add your favorite toppings and enjoy.

Blending the chia seed pudding gets rid of the bumpy texture. This makes it smoother like actual pudding.
Storage instructions
This chia pudding will keep well in the fridge in a sealed container for about 3 days.
Substitutions
- Plant milk - can be subbed with real milk if you aren't vegan.
- Maple syrup/honey - can be subbed with sugar or stevia.

I used my Vitamix blender for this recipe which I love. It is an investment piece but my last Vitamix lasted over 10 years!
Recipe Pro-Tips
Make sure to use unsalted pistachios in this recipe. I prefer raw pistachios and these ones are my favorite.
A good quality protein powder will make this chia pudding so much more delicious! I really love this vanilla one.

Blended Pistachio Chia Pudding (high protein)
Equipment
- 1 blender
Ingredients
- ½ cup chia seeds
- ¼ cup unsalted pistachios - preferably raw if you can't find unsalted rinse the salt off first
- 1 cup milk of choice
- 1 cup greek or skyr yogurt
- 2 servings vanilla protein powder
- tiny pinch salt
- 1 tablespoon honey or maple syrup optional if you want it sweeter, I didn't add any
Optional toppings
- berries
- cacao nibs
- bee pollen
Instructions
- Add all ingredients to a blender and blend until smooth.
- Refrigerate for at least 20 minutes, preferably 30, until set.
- Add your favorite toppings and enjoy.

Hi - is this recipe using 1/2 cup of chia seeds for one serving? I just wanted to make sure as that seems a lot of calories for one serving as 3 Tablespoons of chia is roughly 150 cals!

Hi, this recipe makes 2 servings, so each serving uses 1/4 cup of chia seeds. You can see the total cals per serving on the recipe card.
