Recipe Pro-Tips
Use ripe, juicy watermelon for the best flavor and natural sweetness — no need for added sugar if your melon is peak-season.
Bloom the gelatin properly by sprinkling it evenly over the juice and letting it sit for a few minutes. This ensures a smooth, clump-free texture.
Don’t overheat the juice - warming it gently helps dissolve the gelatin without damaging its gelling properties or altering the flavor.
Strain well for a clean finish - removing the pulp gives the gelatin a smoother, more polished texture.
Use silicone molds for easy removal and cute shapes - ice cube trays or mini muffin tins work great too.

This specific recipe uses gelatin, which is animal-based. To make it vegan, try substituting with agar agar powder. But keep in mind, the texture and ratios will need to be adjusted.
Use high-quality grass-fed gelatin for the best texture and nutritional benefits. Avoid using collagen peptides, as they won't gel the same way.
