coconut water
can sub juice of any kind but coconut water makes these hydrating

mineral salt

gelatin
Instructions
Add coconut water, watermelon and salt to a blender. Blend until smooth.
Strain the blended watermelon using a fine mesh strainer, discarding the pulp.
Divide the juice evenly - pour half into a small saucepan and the other half into a large mixing bowl.
Sprinkle the gelatin evenly over the juice in the bowl. Let it sit for a few minutes to bloom and absorb the liquid (it will begin to solidify).
Meanwhile, gently warm the juice in the saucepan over low heat - do not let it boil or simmer.
Once warmed, add the gelatin mixture to the saucepan.
Whisk until fully combined and the liquid is smooth.
Pour the mixture into molds or a refrigerator-safe dish.
Chill for about 30 minutes, or until set.
Once firm, remove from molds or slice into bite-sized pieces.
