    Fall baking might be the best baking. I love all of the warming fall flavors, especially apples and cinnamon. My boyfriend is also particularly fond of cinnamon apple desserts so I try to sneak in at least a few when the season comes around. This Vegan Cinnamon Apple Crumb Cake (gluten free + healthy) is the perfect fall dessert.

    If you love cinnamon and apples you will love this vegan apple crumb cake. It is so delicious but made with healthier ingredients so you won't feel weighed down or sluggish after. However, don't assume that just because it uses healthier ingredients that it won't taste good, this cake is delicious. This recipe makes the perfect snack, dessert or breakfast.

    This cake uses a combination of oat and almond flour for a fluffy texture and healthy fats and fiber. Arrowroot starch is key to getting a good texture in gluten free baking so this cake uses a touch of it. I wouldn't suggest subbing out any of the flours in this recipe but you could swap out the coconut sugar for brown sugar if you would like. Just note that the recipe would no longer be refined sugar free.

    What ingredients do I need for this vegan and gluten free apple crumb cake?

    • flax seeds
    • vegan milk
    • coconut oil
    • coconut sugar
    • maple syrup
    • vanilla extract
    • apple sauce
    • oat flour
    • almond flour
    • cinnamon
    • baking powder
    • baking soda
    • apple
    • coconut oil
    • oats

    How do I make a gluten free apple crumb cake?

    1. Preheat oven to 350 degrees.
    2. Make your flax eggs by mixing flax and water. Let sit refrigerated for 10-30 minutes.
    3. Mix together your wet ingredients in a large bowl. Pour in dry ingredients minus your apples and mix. Lastly fold in apples.
    4. Pour batter into a lined 8x8 baking dish.
    5. Mix together crumble ingredients in a separate bowl. Pour crumble evenly over batter.
    6. Bake cake for 40-45 minutes. Let cool for 15 minutes and enjoy.

    Substitutions

    • coconut oil can be subbed with butter if you are not vegan
    • coconut sugar can be subbed with brown sugar

    Ingredients

    Base Cake

    Wet

    • 2 flax eggs (2 tbsp ground flax + 5 tbsp water)
    • ½ cup vegan milk
    • 1 tbsp melted coconut oil
    • ½ cup coconut sugar
    • 2 tbsp maple syrup
    • ½ tsp vanilla extract
    • ½ cup apple sauce

    Dry

    • 1 tbsp arrowroot starch or cornstarch
    • 1 ½ cups oat flour
    • 1 cup almond flour
    • 1 tbsp cinnamon
    • 2 tsp baking powder
    • 1/1 tsp baking soda
    • 1 large apple - finely diced

    Crumble Topping

    • 3 tbsp melted coconut oil
    • ½ tbsp cinnamon
    • ½ cup oat flour
    • ¼ cup oats
    • ¼ cup coconut sugar
