These vegan and nut free peppermint chocolate chip cookies are a healthy cookie recipe. This recipe is also gluten free, grain free and refined sugar free. The chickpea flour in this recipe adds blood sugar balancing fiber and protein to this recipe. Coconut oil adds healthy fats and keeps this cookie recipe dairy free.
Instructions to make vegan mint chocolate chip cookies
- Whip aquafaba with a whisk until frothy.
- Add all wet ingredients to a bowl and mix until combined. Pour in dry ingredients and mix until just combined. Lastly fold in the chocolate chips.
- Preheat oven to 350 degrees. While oven is preheating, chill your dough.
- Form 12 evenly sized cookies on a lined sheet pan. Bake for 10-12 minutes.
- Let cookies cool for 10 minutes and enjoy.

- ½ cup melted coconut oil
- ¾ coconut sugar
- 1 tsp peppermint extract
- ½ tsp vanilla extract
Dry
- 1 ¼ cup + 3 tbsp chickpea flour
- ¼ cup cacao
- ½ tsp baking soda
- ½ cup - 1 cup chocolate chips (adjust to your preference)
