These vegan mint double chocolate chip cookies (chickpea flour) are perfect for the holidays.

Ingredients

Wet

  • 4 tbsp aquafaba (do not sub)
  • 1/2 cup melted coconut oil
  • 3/4 coconut sugar
  • 1 tsp peppermint extract
  • 1/2 tsp vanilla extract

Dry

  • 1 1/4 cup + 3 tbsp chickpea flour
  • 1/4 cup cacao
  • 1/2 tsp baking soda
  • 1/2 cup - 1 cup chocolate chips (adjust to your preference)

Instructions

  1. Whip aquafaba with a whisk until frothy.
  2. Add all wet ingredients to a bowl and mix until combined. Pour in dry ingredients and mix until just combined. Lastly fold in the chocolate chips.
  3. Preheat oven to 350 degrees. While oven is preheating, chill your dough.
  4. Form 12 evenly sized cookies on a lined sheet pan. Bake for 10-12 minutes.
  5. Let cookies cool for 10 minutes and enjoy.
