This makes 2-3 servings of noodles
tofu
- 1 block tofu - cubed
- 1 tbsp oil
- 2 tbsp arrowroot starch
- ½ tbsp soy sauce
- pinch salt/pepper
- pinch garlic powder
Cilantro avocado sauce
- 1 bunch cilantro
- 2 tbsp sesame oil
- ¼ cup water
- juice from ½ lime
- ¼ inch piece of ginger
- 1 garlic clove
- 1 tbsp miso (can sub soy sauce or 1 tsp salt)
- 1 tsp maple syrup
+ 1 pack cooked soba noodles or pasta of choice
Instructions
- Preheat oven to 425 degrees.
- Toss tofu in starch, oil, and spices. Bake for 30 minutes.
- Blend together sauce ingredients.
- Toss cooked noodles with sauce and tofu. Dig in.
