Ingredients
  

sweet potatoes

Whipped feta

  • 8 oz block feta
  • ¾ cup unsweetened greek or skyr yogurt
  • 1 tablespoon maple syrup
  • ¼ cup olive oil use code avocadoskillet for 20% off the linked oil
  • 2 cloves garlic
  • pinch salt/pepper

Instructions
 

  • Preheat oven to 425 degrees.
  • Add sweet potatoes to a bowl and toss together with all of the ingredients under the sweet potato section. Add sweet potatoes to a sheet pan lined with parchment paper or silicone. Roast for 25-25 minutes, until fork tender.
  • Add all whipped feta ingredients to a food processor. Blend until smooth.
  • Add whipped feta to a plate and top with cooked sweet potato. Sprinkle over pomegranate, pistachios and mint. If you use a dinner sized plate this will take up two plates. You could also use a large dinner tray.
