- leeks
- garlic

Substitutions
- butter - you can use vegan butter here. I would not suggest subbing in olive oil as we want the flavor that butter imparts.
- broth - you can use vegetable broth, chicken broth or chicken bone broth for this recipe.
- cilantro - any fresh herb works here.
- parmesan - you can use vegan parmesan here. The parmesan does make this soup taste less like a green juice so I do not suggest omitting it.

I like using Eden Foods canned beans as they are pressure cooked, soaked and easier to digest.
If you want to bump up the protein in this recipe use bone broth.

High Protein Green Goddess Detox Soup
Equipment
- 1 soup pot
Ingredients
- 2 tablespoons butter - divided
- 3 leeks - finely chopped
- 5 cloves garlic - finely chopped
- 3 stalks celery - finely chopped
- 1 teaspoon salt
- ¾ teaspoon paprika
- ¾ teaspoon cumin
- 4 cups vegetable broth or chicken broth Use bone broth for extra protein
- 1 cup cilantro - finely chopped
- 1 can white beans - drained
- juice from ½ lemon
- 1 head broccoli - broken into florets
- 1 tablespoon chunk of parmesan
- 1 handful spinach
Instructions
- Heat 1 tablespoon butter over medium heat in a soup pot until melted. Add celery and leeks and cook for 5 minutes.
- Add garlic, salt, paprika, black pepper and cumin. Cook for an additional 5 minutes.
- Add all remaining ingredients to the pot except for the spinach. Bring to a simmer and cook for 10-15 more minutes, until the broccoli is fork tender.
- Add soup, parmesan, spinach and the rest of the butter to a blender. Blend until smooth. Alternatively you can do this with an immersion blender in the pot.
- Serve soup and enjoy.

I have noticed that you top several of your soups with wonderful looking garnishes. Several of your soups, like this one, are topped with a white swirl that appears to be a liquid of some kind. What is that swirl made of? I love the presentation and would love to add that swirl topping.

Hi Joan, I mix greek yogurt with a little bit of water for the swirl topping. This could also be accomplished with heavy cream, however I prefer the taste of yogurt.
