Heat 1 tablespoon butter over medium heat in a soup pot until melted. Add celery and leeks and cook for 5 minutes.
Add garlic, salt, paprika, black pepper and cumin. Cook for an additional 5 minutes.
Add all remaining ingredients to the pot except for the spinach. Bring to a simmer and cook for 10-15 more minutes, until the broccoli is fork tender.
Add soup, parmesan, spinach and the rest of the butter to a blender. Blend until smooth. Alternatively you can do this with an immersion blender in the pot.
Serve soup and enjoy.

This makes 3-4 servings of soup, depending on how much you want to eat.
