High protein cottage cheese cheesecake toast

This High protein cottage cheese cheesecake toast is a delicious healthy recipe.

Ingredients
  

  • ¼ cup + 2 tablespoons cottage cheese
  • 1 medium egg
  • 1 tablespoon coconut sugar or granulated sugar of choice
  • ½ teaspoon vanilla extract
  • teaspoon cinnamon adjust to the amount of cinnamon you want
  • 2 slices sourdough or hearty bread of choice

Optional Toppings

  • ½ cup frozen blueberries* I like wymans frozen wild blueberries

Instructions
 

  • Preheat oven to 425 degrees.
  • Add cottage cheese, egg, sugar and vanilla to a food processor. Blend until smooth.
  • Press down on middle bread to create an indent. If you're using a hearty bread like sourdough it will be harder to make and indent but as long as there is a slight indent in the bread it is fine. Coat bread in cinnamon.
  • Add bread slices to sheet pan lined with parchment paper or silicone. Add half of the cheesecake filling to one piece of bread and then repeat with the other bread.
  • Bake for 10-15 minutes, until bread is at your desired crispness level. If you have an air fryer you can also air fry this toast at 400 degrees for 7-10 minutes.
  • Heat a small sauce pan over medium heat. Add the frozen blueberries and cook until warmed.
  • Add cooked blueberries to toast and dig in.

Notes

*Sub with fresh chopped fruit of choice, I just love this toast with blueberry compote!
