Instructions
Preheat oven to 425 degrees.
Add cottage cheese, egg, sugar and vanilla to a food processor. Blend until smooth.
Press down on middle bread to create an indent. If you're using a hearty bread like sourdough it will be harder to make and indent but as long as there is a slight indent in the bread it is fine. Coat bread in cinnamon.
Add bread slices to sheet pan lined with parchment paper or silicone. Add half of the cheesecake filling to one piece of bread and then repeat with the other bread.
Bake for 10-15 minutes, until bread is at your desired crispness level. If you have an air fryer you can also air fry this toast at 400 degrees for 7-10 minutes.
Heat a small sauce pan over medium heat. Add the frozen blueberries and cook until warmed.
Add cooked blueberries to toast and dig in.

*Sub with fresh chopped fruit of choice, I just love this toast with blueberry compote!
