These ginger miso soba noodles with crispy chickpeas will be your new go to recipe.
Ingredients
This makes 2-3 servings of noodles
Crispy Chickpeas
- 1 can chickpeas - drained
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1 tbsp avocado oil or oil of choice
Ginger Miso Sauce
- 2 medium carrots - roughly chopped
- 2 tbsp miso paste
- ~1 inch piece ginger
- 1 garlic clove
- ⅓ cup + 1 tablespoon toasted sesame oil (regular sesame oil is ok but not as flavorful)
- ⅓ cup rice wine vinegar
+ 1 bunch cilantro - finely chopped
+ 1 pack soba noodles cooked according to directions
Instructions
- Preheat oven to 424 degrees.
- Toss chickpeas in oil, salt/pepper and garlic powder. Add to a lined sheet pan and roast for 30 minutes.
- Add all sauce ingredients to a food processor. Blend until semi smooth.
- Toss noodles with sauce, chickpeas and cilantro. Dig in and enjoy.
