Ingredients

This makes 2-3 servings of noodles

Crispy Chickpeas

  • 1 can chickpeas - drained
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 tbsp avocado oil or oil of choice

Ginger Miso Sauce

  • 2 medium carrots - roughly chopped
  • 2 tbsp miso paste
  • ~1 inch piece ginger
  • 1 garlic clove
  • 1/3 cup + 1 tbsp toasted sesame oil (regular sesame oil is ok but not as flavorful)
  • 1/3 cup rice wine vinegar

+ 1 bunch cilantro - finely chopped

+ 1 pack soba noodles cooked according to directions

Instructions

  1. Preheat oven to 424 degrees.
  2. Toss chickpeas in oil, salt/pepper and garlic powder. Add to a lined sheet pan and roast for 30 minutes.
  3. Add all sauce ingredients to a food processor. Blend until semi smooth.
  4. Toss noodles with sauce, chickpeas and cilantro. Dig in and enjoy.
