Fava Bean Chickpea Salad
Ingredients
Salad
- 1 small cucumber - diced
- 1 can chickpeas - drained
- 1 ½ cups cooked fava beans from about 1 cup dried
- ½ cup parsley - finely chopped
- 1 8 oz container cherry tomatoes - halved
- 1 bunch scallions - finely sliced
- ½ block feta - crumbled optional
- ¼ cup pumpkin seeds or nut/seed of choice
- salt/pepper to taste
Dressing
- ½ cup olive oil
- juice from ½ lemon
- ¼ cup apple cider vinegar
- 1 clove garlic - minced
- 1 teaspoon mustard
- 1-2 teaspoons maple syrup or honey
- salt/pepper to taste
Instructions
- Add all dressing ingredients to a bowl and mix until combined.
- Add all salad ingredients to a large bowl and toss together with dressing.

I used Borlotti beans instead of fava beans, omitted the feta and tomates, tossed in a shredded carrot and also topped with Tahina and it turned out delicious!
