This Asian Lentil and Green Bean Salad with Sesame Dressing is my latest salad obsession. I have made it twice in the past week - it is that good. The sesame ginger dressing pairs so well with the crunchy vegetables.

Substitutions
- mint - can be subbed with cilantro or your favorite herb.
- maple syrup - can be subbed with honey.
- cashews - you can use any nut or seed that you like.
- sesame oil - you can use toasted or regular sesame oil.

You can store the salad in a sealed container in your fridge for up to 4 days.

Asian Lentil and Green Bean Salad with Sesame Dressing
Ingredients
Green Beans
- 1 lb green beans - cut in half with stems removed if needed
- 1 tablespoon sesame oil
- pinch salt/pepper
Dressing
- ⅓ cup sesame oil Alternatively you can use all toasted sesame oil
- 1 tablespoon toasted sesame oil
- 1 tablespoon maple syrup
- 1 teaspoon grated ginger
- juice from 1 lime
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 clove grated or minced garlic
- black pepper to taste
Other salad ingredients
- 2 ½ cups lentils
- 2 medium/small red bell peppers - diced
- 1 small red onion - diced
- 1 bunch mint - finely chopped
- ¾ cups cashews - roughly chopped or crushed
Instructions
- Heat sesame oil in a large skillet over medium heat. Add green beans, salt and pepper and cook for 5 minutes. Add garlic and cook for another 5 minutes, or until green beans are cooked through.
- Mix together dressing in a bowl.
- Add dressing, green beans and the rest of the salad ingredients to a large bowl. Toss to combine and dig in.

Wow, so so delicious!! I highly recommend trying this recipe! I didn't have cashews, mint or ginger but it was still amazing without it. Can't say enough good this about this recipe - so yummy and filling and you feel good afterwards. Do yourself a favor and make it 🙂
