- 1 16 oz pack cherry tomatoes - halved
- 1 cup pistachios - roughly chopped
- ½ cup fresh chopped mint from about 1 small bunch
- 1 block feta - crumbled
- Dressing
- ½ cup olive oil
- juice from 1 lemon
- 1 tablespoon honey
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon thyme
- 1 teaspoon mustard
- 1 garlic clove
- 1 small shallot - ends chopped off and peeled
