I am a chocolate lover and chocolate desserts are my favorite. Brownies are one of my favorite desserts and I knew I had to create a healthier and vegan version. This vegan olive oil oat flour brownies are my new favorite brownie recipe.
These brownies are so fudgy and amazing. You'd never guess that they are made with healthier and vegan ingredients. Yes these brownies still have sugar, but they have some healthy ingredients to balance it out. The almond butter and olive oil add in healthy fats and the oat flour has some fiber. Overall these brownies have way less sugar than your standard brownie as well.

Ingredients
- coconut sugar
- flax seeds
- maple syrup
- almond butter
- cacao powder
- plant milk
- olive oil
- oat flour
- salt
- chocolate chips

Substitutions
- Almond butter - can be subbed with another nut or seed butter. I do not recommend using tahini because it is too liquidy.
- Maple syrup - can be subbed with honey.
- Coconut sugar - could be subbed with brown sugar.
- I do not recommend subbing the oat flour.
Instructions to make gluten free vegan brownies
- Preheat oven to 350 degrees.
- Make your flax eggs by mixing flax seeds and water. Let sit refrigerated for 10-15 minutes to set.
- Pour dry ingredients into a bowl and mix until just combined. Pour in dry ingredients and mix until smooth and fully combined.
- Pour batter into an 8 inch square baking dish lined with parchment paper.
- Bake brownies for 25-30 minutes. I baked mine for 30 minutes on the dot.
- Let brownies cool for 30 minutes in the fridge or 1 hour otherwise. This step is crucial so the brownies set.
Recipe Pro-Tips
Do not sub out the flour as this will alter the recipe.
I do not suggest using tahini in this recipe as it will be too liquidy.

Olive oil adds moisture and fats to baking similar to butter.
Since they are made with oat flour, cacao and have a lower sugar content they are healthier than your standard brownie.

Wet
- ⅓ cup olive oil
- ½ tablespoon vanilla extract
- ⅓ cup coconut sugar can sub brown sugar
- ¼ cup maple syrup
- ¼ cup almond butter
- 1 tablespoon plant milk of choice
- 2 flax eggs 2 tablespoon ground flax + 6 tablespoon water

- ⅓ cup cacao
