Green goddess is great and all, but I wanted to mix it up. I knew I wanted to make a golden goddess themed salad so I brainstormed all of the orange vegetables and ingredients that I could. This Vegan Golden Goddess Salad with Tofu and Cabbage is the result of my golden goddess dreams.

This salad has an anti-inflammatory turmeric based yogurt golden goddess dressing. It is also packed with orange vegetables like carrots and orange bell pepper that are packed with vitamin A and healthy for your skin.

- tofu
- soy sauce
- arrowroot starch
- garlic powder
- turmeric

Storage instructions for golden goddess cabbage salad with cashews
Since this salad has a cabbage base it can be mixed with dressing and not get soggy. I recommend storing the leftovers in the fridge in a sealed container for up to 5 days.
Substitutions for golden goddess salad recipe
- vegan yogurt can be subbed with greek yogurt if you are not vegan
- basil can be subbed with another herb
- tofu could be subbed with chickpeas

Vegan Golden Goddess Salad with Tofu and Cabbage
Ingredients
- This makes 3-4 servings of salad depending on how hungry you are
- Tofu
- 1 block tofu - cubed
- 1 tablespoon oil
- 1 tablespoon soy sauce
- 1 tablespoon arrowroot starch
- 1 teaspoon garlic powder
- 1 teaspoon turmeric
- pinch salt/pepper
- Golden Goddess Dressing
- ½ cup vegan unsweetened yogurt
- ¼ cup olive oil
- juice from ½ lemon
- 1 teaspoon turmeric
- ½ teaspoon grated ginger
- 2 cloves garlic - minced
- ½ teaspoon mustard
- 1 teaspoon maple syrup
- pinch salt/pepper
- Salad
- 1 small head cabbage - finely chopped about 4-5 cups
- 2 medium carrots - finely chopped
- 1 orange bell pepper - finely chopped
- 1 cup basil - finely chopped
- 1 cup cashews - roughly chopped
Instructions
- Toss tofu in oil, soy sauce, starch and spices until fully coated. Add tofu to a lined sheet pan and roast at 425 degrees for 30 minutes. Alternatively you can air fry the tofu at 400 degrees for about 15 minutes.
- Mix together your golden goddess salad dressing a bowl until fully combined.
- Toss salad ingredients with tofu and dressing in a large bowl.
