- green bell pepper
- onion

- oregano
- nutritional yeast

- champagne vinegar
- olive oil
- lemon
- garlic cloves
- mustard
How do I store the leftovers mediterranean white bean salad?
The rest of this salad can be stored in an airtight container in your fridge. Since it does not have lettuce it will not get soggy.

This greek inspired white bean salad (vegan and high protein) is a delicious vegan salad recipe.

Ingredients
This makes about 4 servings of salad
Salad
- 2 cans white beans - drained
- 1 green bell pepper - diced
- 1 red onion - finely chopped
- 1 bunch parsley - finely chopped
- 1 large tomato - diced
- 1 small cucumber - diced
- 1 tbsp oregano
- 1 tbsp nutritional yeast
- pinch salt
- pinch pepper
Champagne Vinaigrette
- ¼ cup champagne vinegar
- ½ cup olive oil
- juice from ½ lemon
- 2 garlic cloves - minced
- 1 tbsp mustard
- pinch salt
- pinch pepper
Instructions
- Mix together all dressing ingredients. Set aside.
- Add all salad ingredients to a bowl and mix. Pour over dressing and mix again.
