With the warmer weather coming up, all I have been craving is salad! I love making no lettuce salads because they do not get soggy. This Greek White Bean Salad (Vegan and High Protein) is my latest salad recipe and it is my new favorite. This salad is by no means authentic but it is greek inspired with the greek dressing and tomatoes, red onion, cucumbers and bell pepper.
This salad only takes 15 minutes to make but is packed with flavor. It is perfect for those hectic weeknights.

Substitutions
- Any vinegar can be subbed for the champagne vinegar.
Storage instructions
The rest of this salad can be stored in an airtight container in your fridge. Since it does not have lettuce it will not get soggy.

Greek white bean salad (vegan and high protein)
Ingredients
Salad
- 2 cans white beans - drained
- 1 green bell pepper - diced
- 1 red onion - finely chopped
- 1 bunch parsley - finely chopped
- 1 large tomato - diced
- 1 small cucumber - diced
- 1 tablespoon oregano
- 1 tablespoon nutritional yeast
- pinch salt
- pinch pepper
Champagne Vinaigrette
- ¼ cup champagne vinegar
- ½ cup olive oil
- juice from ½ lemon
- 2 garlic cloves - minced
- 1 tablespoon mustard
- pinch salt
- pinch pepper
Instructions
- Mix together all dressing ingredients. Set aside.
- Add all salad ingredients to a bowl and mix. Pour over dressing and mix again.
