Vegan Fall Harvest Pizza with Delicata Squash and Basil
Ingredients
Delicata squash
- 1 delicata squash - cut in half and then thinly sliced
- 1 tablespoon oil
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
Other pizza ingredients
- ¼ cup basil - finely chopped
- pizza sauce
- vegan or regular cheese of choice about ¼ cup (If you're not vegan goat cheese would be good with this)
- pizza crust of choice I like Banza
- 1-2 teaspoon maple syrup agave or honey ( optional)
- pinch red pepper flakes optional
Instructions
- Preheat oven to 400 degrees.
- Add delicata squash to a sheet pan lined with parchment paper. Toss with oil, salt, pepper and garlic powder. Cook for 30 minutes.
- Top pizza crust with a thin layer of sauce.
- Once delicata squash is done cooking top pizza with squash. You will likely have some leftover. Add cheese and basil to pizza. Lightly drizzle maple syrup or honey on pizza. Sprinkle red pepper flakes on pizza.
- Cook pizza according to instructions. Let cool, slice and serve.
