1 delicata squash - cut in half and then thinly sliced
1 tbsp oil
1 tsp salt
1 tsp garlic powder
1 tsp black pepper
Other pizza ingredients
1/4 cup basil - finely chopped
pizza sauce
vegan or regular cheese of choice ( about 1/4 cup) (If you're not vegan goat cheese would be good with this)
pizza crust of choice (I like Banza)
1-2 tsp maple syrup, agave or honey ( optional)
pinch red pepper flakes (optional)
Instructions
Preheat oven to 400 degrees.
Add delicata squash to a sheet pan lined with parchment paper. Toss with oil, salt, pepper and garlic powder. Cook for 30 minutes.
Top pizza crust with a thin layer of sauce.
Once delicata squash is done cooking top pizza with squash. You will likely have some leftover. Add cheese and basil to pizza. Lightly drizzle maple syrup or honey on pizza. Sprinkle red pepper flakes on pizza.
Cook pizza according to instructions. Let cool, slice and serve.
