I love chocolate. My favorite desserts all involve chocolate, the more the better. I created these Vegan Brownie Chocolate Chip Cookies (oat and almond flour) to satisfy that craving. They are so delicious and chewy while still having a crisp to them. Try these, and let me know what you think!

Ingredients for vegan double chocolate chunk cookies
- maple syrup
- coconut sugar
- almond butter
- coconut oil
- vanilla extract
- baking powder
- baking soda
- cacao
- salt
- chocolate chips
Instructions to make double chocolate oat and almond flour chocolate chip cookies
- Preheat oven to 350 degrees.
- Make your flax egg by combining flax seeds and water. Set aside in the fridge for at least 10 minutes and not more than 30.
- Whisk together dry ingredients minus your chocolate chips, and set aside. Combine wet ingredients including your flax egg and then add in dry ingredients using a spatula. Lastly, fold in your chocolate chips.
- Line a cookie sheet with parchment paper or silicone. Take small handfuls of dough and roll into balls and then press down to flatten on your cookie sheet. This dough is very sticky so I recommend working with wet hands and quickly.
- Bake for 10 minutes, remove from oven and let cool for 10 minutes.
Substitutions for cacao chocolate chip cookies
- coconut sugar - can be subbed with brown sugar
- almond butter - can be subbed with peanut butter, cashew butter or sunflower seed butter
- maple syrup - can be subbed with honey

Wet
- 1 flax egg - 1 tablespoon ground flax + 2 ½ tbsp water
- ¼ cup maple syrup
- ¼ cup coconut sugar
- ½ cup creamy almond butter (or sub other nut/seed butter)
- 2 tbsp coconut oil melted
- 1 tsp vanilla extract
Dry
- ½ cup oat flour
- 2 tbsp almond flour
- ½ tsp baking powder
- ½ tsp baking soda
- ¼ cup cacao powder
- pinch salt
- 1 cup chocolate chips or chopped chocolate

*you can sub a real egg, if you do this just skip the step to prepare the flax egg
