1/2 cup creamy almond butter (or sub other nut/seed butter)
2 tbsp coconut oil melted
1 tsp vanilla extract
Dry
1/2 cup oat flour
2 tbsp almond flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 cup cacao powder
pinch salt
1 cup chocolate chips or chopped chocolate
Instructions
Preheat oven to 350 degrees.
Make your flax egg by combining flax seeds and water. Set aside in the fridge for at least 10 minutes and not more than 30.
Whisk together dry ingredients minus your chocolate chips, and set aside. Combine wet ingredients including your flax egg and then add in dry ingredients using a spatula. Lastly, fold in your chocolate chips.
Line a cookie sheet with parchment paper or silicone. Take small handfuls of dough and roll into balls and then press down to flatten on your cookie sheet. This dough is very sticky so I recommend working with wet hands and quickly.
Bake for 10 minutes, remove from oven and let cool for 10 minutes.
Notes
*you can sub a real egg, if you do this just skip the step to prepare the flax egg
