I have been so into healthy salad recipes lately. So much so that I am actually putting a ban on myself making anymore salads after this recipe lol. This Vegan Avocado Ranch Romaine Salad with Chickpeas is my latest salad recipe and it is so good!

Sweet potatoes and chickpeas go so well together. Chickpeas also serve as the protein source in this salad. The avocado ranch dressing might be my new favorite salad dressing also. It's packed with so much flavor and is oil free if that is what you are into.

This vegan avocado ranch salad with crispy chickpeas is

What ingredients do I need to make a vegan avocado ranch salad?
- chickpeas
- sweet potato
- salt
- pepper
- garlic powder
- onion powder
- oil
- avocado
- yogurt
- water
- onion powder
- apple cider vinegar
- lemon
- chives
- dill
- parsley
- romaine
- cucumber
- sunflower seeds
Instructions to make vegan crunchy romaine salad
- Preheat oven to 425 degrees.
- Add chickpeas and sweet potato to a lined sheet pan, toss with oil and spices. Bake for 30 minutes.
- Add all dressing ingredients to a blender or processor and blend until smooth.
- Toss chickpeas, sweet potatoes and dressing with all other salad ingredients.

This vegan avocado ranch romaine salad with chickpeas is a delicious salad recipe.
Ingredients
This makes about 4 servings of salad
Chickpeas and sweet potato
- 1 can chickpeas - drained
- 1 small sweet potato - cubed
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1-2 tablespoon oil
Avocado Ranch Dressing
- 1 ripe avocado
- ½ cup unsweetened vegan or greek yogurt
- ½ cup water
- 1 ½ tsp garlic powder
- 1 ½ tsp onion powder
- 1 tbsp apple cider vinegar
- juice from ½ lemon
- 1-2 teaspoon salt (adjust to your preference)
- 1 tsp black pepper
- ~2 tablespoon fresh chives (or 1 tablespoon dry)
- ~2 tablespoon fresh dill (or 1 tablespoon dry)
- ~2 tablespoon fresh parsley (or 1 tablespoon dry)
Other salad ingredients
- 1 small head romaine or ½ of a large head - chopped (about 4 cups)
- 1 cucumber - finely chopped
- 1 cup sunflower seeds
