I have been feeling so inspired with all of the amazing produce so I made this Summer farro salad with apple cider vinaigrette (vegan).
This salad is super easy to make - you don't need to cook anything besides the farro. It is also packed with all of the best summer produce like cucumbers, tomatoes and mint.

- olive oil
- apple cider vinegar
- dijon mustard
- maple syrup
- lemon

How do I store the leftover high protein vegan farro salad?
Since this salad does not have any lettuce it will not get soggy. You can mix the entire salad with the dressing and store it in a sealed container in your fridge for up to 5 days or so.

Summer farro salad with apple cider vinaigrette (vegan)
Ingredients
- This makes 3-4 servings of salad
- Salad
- 1 cucumber - diced
- 1 red bell pepper - diced
- 1 8 oz container of cherry tomatoes - roughly chopped
- 1 bunch mint - finely chopped
- 2 cups cooked farro
- 1 can chickpeas - drained
- 1 cup pumpkin seeds
- salt/pepper to taste
- Dressing
- ⅓ cup olive oil
- ¼ cup apple cider vinegar
- 1 teaspoon dijon mustard
- 1 tablespoon maple syrup
- juice from ½ lemon
- 2 garlic cloves - minced
- salt/pepper to taste
Instructions
- Mix together salad dressing and set aside.
- Pour all salad ingredients into a large bowl and mix with dressing.
