Chickpeas and sweet potato
- 1 can chickpeas - drained
- 1 small sweet potato - cubed
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1-2 tbsp oil
Avocado Ranch Dressing
- 1 ripe avocado
- 1/2 cup unsweetened vegan or greek yogurt
- 1/2 cup water
- 1 1/2 tsp garlic powder
- 1 1/2 tsp onion powder
- 1 tbsp apple cider vinegar
- juice from 1/2 lemon
- 1-2 tsp salt (adjust to your preference)
- 1 tsp black pepper
- ~2 tbsp fresh chives (or 1 tbsp dry)
- ~2 tbsp fresh dill (or 1 tbsp dry)
- ~2 tbsp fresh parsley (or 1 tbsp dry)
Other salad ingredients
- 1 small head romaine or 1/2 of a large head - chopped (about 4 cups)
- 1 cucumber - finely chopped
- 1 cup sunflower seeds
