This vegan avocado ranch romaine salad with chickpeas is a delicious salad recipe.

Ingredients

This makes about 4 servings of salad

Chickpeas and sweet potato

  • 1 can chickpeas - drained
  • 1 small sweet potato - cubed
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1-2 tbsp oil

Avocado Ranch Dressing

  • 1 ripe avocado
  • 1/2 cup unsweetened vegan or greek yogurt
  • 1/2 cup water
  • 1 1/2 tsp garlic powder
  • 1 1/2 tsp onion powder
  • 1 tbsp apple cider vinegar
  • juice from 1/2 lemon
  • 1-2 tsp salt (adjust to your preference)
  • 1 tsp black pepper
  • ~2 tbsp fresh chives (or 1 tbsp dry)
  • ~2 tbsp fresh dill (or 1 tbsp dry)
  • ~2 tbsp fresh parsley (or 1 tbsp dry)

Other salad ingredients

  • 1 small head romaine or 1/2 of a large head - chopped (about 4 cups)
  • 1 cucumber - finely chopped
  • 1 cup sunflower seeds

Instructions

  1. Preheat oven to 425 degrees.
  2. Add chickpeas and sweet potato to a lined sheet pan, toss with oil and spices. Bake for 30 minutes.
  3. Add all dressing ingredients to a blender or processor and blend until smooth.
  4. Toss chickpeas, sweet potatoes and dressing with all other salad ingredients.
