Add cottage cheese, honey, vanilla and pistachios to a food processor or blender. Blend until smooth.
Add ice cream to a bowl or loaf pan and freeze for 2-4 hours until ice cream is set.
Serve and enjoy. I topped mine with additional chopped pistachios and a drizzle of honey. If your ice cream turns too hard you can let it sit out for 15-30 minutes to thaw slightly.
Notes
This makes 3-4 servings of ice cream. You could easily halve the recipe to make a more single/double serve version.Full fat cottage cheese will make the recipe creamier but some readers have had success with low fat. I do not suggest using no fat.You can store the recipe in a sealed container in your freezer. Just let the ice cream sit out for about 30 minutes to thaw out a little for a more ice cream like texture.
