- cottage cheese
- salt
- baking powder
- flour
- butter
- coconut sugar

Substitutions
- cottage cheese - greek yogurt is a good substitute. A thick vegan yogurt such as coconut yogurt would also work.
- all purpose flour - I do think an all purpose gluten free flour would work however it may alter the texture of the pretzels and make them more dense. Please do not sub any other type of flour as it will ruin the recipe.
- butter - feel free to use vegan butter or coconut oil.
- coconut sugar - regular sugar works here.

Cottage Cheese Cinnamon Rolls
Equipment

Ingredients
dough
- 1 ¾ cup all purpose flour
- 1 tablespoon baking powder
- 1 ½ teaspoons salt
- 1 ¼ cup + 1 tablespoon full fat cottage cheese
filling
- ⅓ cup coconut sugar
- 1 ½ tablespoons melted butter or coconut oil
- 1 tablespoon cinnamon
icing
- ⅓ cup cream cheese
- 1-2 tablespoons monk fruit or other powdered sugar*
- 1 tablespoon milk of choice
Instructions
- Preheat oven to 350 degrees.
- Add cottage cheese to a food processor and blend until smooth.
- Add flour, baking powder and salt to a bowl. Mix together until combined. Fold in cottage cheese and knead until fully combined.
- Sprinkle flour onto a cutting board. Add dough and roll into a rectangle shape that is about ½ inch thick.
- Mix together filling ingredients in a bowl until a paste forms. Spread out filling on the dough rectangle.
- Slowly roll out rectangle starting with one of the shorter sides into a cylinder shape. Using a wet knife or a piece of string cut the dough into 6-7 rolls. I cut mine into 7 pieces but 6 would have been better.
- Add rolls to a baking dish lined with parchment paper. Bake for 30-40 minutes until rolls are golden brown.
- Add all icing ingredients to a bowl and mix together until smooth.
- Remove rolls from oven and let cool. Top with icing and dig in.
