Add cottage cheese to a food processor and blend until smooth.
Add flour, baking powder and salt to a bowl. Mix together until combined. Fold in cottage cheese and knead until fully combined.
Sprinkle flour onto a cutting board. Add dough and roll into a rectangle shape that is about ½ inch thick.
Mix together filling ingredients in a bowl until a paste forms. Spread out filling on the dough rectangle.
Slowly roll out rectangle starting with one of the shorter sides into a cylinder shape. Using a wet knife or a piece of string cut the dough into 6-7 rolls. I cut mine into 7 pieces but 6 would have been better.
Add rolls to a baking dish lined with parchment paper. Bake for 30-40 minutes until rolls are golden brown.
Add all icing ingredients to a bowl and mix together until smooth.
Remove rolls from oven and let cool. Top with icing and dig in.
Notes
*You can use coconut sugar however this will make the icing brown.
