- Sweet potato – Cooked and mashed until very smooth to create a naturally sweet, creamy pancake base.

Substitutions
- Cheddar cheese - any other hard cheese works. I don't suggest using a pre shredded cheese as these have added ingredients.
- DO NOT sub out the other ingredients especially the eggs.

I don't suggest using canned sweet potato as this would make the recipe too mushy.
Make sure to oil the waffle maker to prevent sticking.

I like to serve these waffles with avocado, an egg, and hot sauce/sriracha.
I would not suggest freezing these because of the cheese.

Savory 3 Ingredient Sweet Potato Waffles
Equipment
- 1 mini waffle maker
- spray olive or avocado oil
Ingredients
- 1 cup cooked and mashed sweet potato*
- 2 large eggs
- ¼ cup shredded cheddar cheese
Optional other ingredients
- pinch salt
- pinch black pepper
- ¼ teaspoon garlic powder
Instructions
- Add all ingredients to a bowl. Whisk together until fully combined.
- Preheat mini waffle maker and then spray generously with oil. Add batter (dash mini waffle maker uses ¼ cup). Cook for 6-8 minutes, until cooked through. I cooked mine for 8 minutes to get the waffle nice and crispy. Each time you cook a waffle - oil both sides of the waffle maker again. This is crucial to prevent sticking. If you have a cooling rack let the waffles cool on the rack for 5 minutes to enhance crisp.
- Serve waffles with your favorite toppings, I went with an fried egg, avocado, sriracha and cilantro.
