This Beef Taco Skillet with Chipotle Yogurt Sauce is what I make when I want something super comforting that is still nutritious. This recipe is great to make in late summer and early fall because it utilizes late summer produce like bell peppers. This meal comes together in just one skillet in less than 30 minutes making it perfect for busy weeknights. Also it has 36 grams of protein and 11 grams of fiber making it as satisfying as it is deliciuos.

Substitutions
- Black beans – pinto or white beans also work.
- Cheddar cheese – jack cheese also works.
- Ground beef – To make this vegetarian you could add tofu crumbles or additional beans.
Step-by-Step Instructions

- Blend the chipotle yogurt sauce ingredients until smooth.
- Cook aromatics and beef.
- Add remaining ingredients except for cheese and simmer.
- Top with cheese and broil until bubbly.
- Serve with chipotle yogurt sauce.

Recipe Pro-Tips
Use a good quality cheese. I always recommend using grass fed and pasture raised cheese as it tastes better, is more nutritious and is better for the animals. Organic valley is my favorite!
Shred your own cheese. Cheese shredded from a block tastes better and melts better.
Use pressure cooked beans if you have trouble digesting beans. I absolutely love the eden foods brand as they are pressure cooked and soaked!

Beef Taco Skillet with Chipotle Yogurt Sauce

Ingredients

- 1 tablespoon olive or avocado oil can also use butter or any neutral cooking oil
- 1 small red onion
- ½-1 jalapeno or serrano pepper - minced adjust to your spice preference
- 4 cloves garlic - minced
- 1 large bell pepper - sliced about 1 cup sliced peppers, i used mini bell pepper
- 1 lb ground beef preferably 100% grass fed
- 2 teaspoons cumin
- 2 teaspoons chili powder
- ½ teaspoon onion powder
- ½ teaspoon paprika
- ½ teaspoon oregano
- 1-1 ½ teaspoon salt
- black pepper to taste
- ~28 oz can crushed tomatoes
- ½ cup cilantro - finely chopped
- 1 can black beans - drained
- 1 - 1 ½ cups grated cheddar cheese adjust to your cheesiness preference
chipotle yogurt sauce
- ¼ teaspoon salt
- 1 cup greek yogurt
- juice from ½ lime
- 1-2 chipotle pepper from can chipotle peppers in adobo sauce* adjust to spice preference, I used 1.5
- ½ tablespoon maple syrup
- 1 clove garlic
- 1 teaspoon olive oil
- 1-2 tablespoons water to thin optional, depends on how thick your yogurt is
Optional toppings and sides
- avocado
- additional fresh chopped cilantro
Instructions
- Add all chipotle yogurt ingredients to a food processor or blender and blend until smooth. Set aside.
- Add oil to a skillet over medium heat. Add onion, bell pepper, jalapeno and garlic. Cook for 3 minutes. Add ground beef and seasonings. Cook for about 5 minutes until the ground beef is browned.
- Add all remaining ingredients to the skillet except for the cheese. Bring to a simmer and cook for 10-15 more minutes. Turn off heat and top with cheese.
- Turn on the broiler to the oven and add the skillet to the oven. Cook for 3-5 minutes, until cheese is bubbly.
- Top skillet with yogurt sauce and cilantro (if using). Divide out and serve with chips and avocado (if using).
