Savory 3 Ingredient Sweet Potato Waffles

  • 1 cup cooked and mashed sweet potato*
  • 2 large eggs
  • ¼ cup shredded cheddar cheese

  • Add all ingredients to a bowl. Whisk together until fully combined.
  • Preheat mini waffle maker and then spray generously with oil. Add batter (dash mini waffle maker uses ¼ cup). Cook for 6-8 minutes, until cooked through. I cooked mine for 8 minutes to get the waffle nice and crispy. Each time you cook a waffle - oil both sides of the waffle maker again. This is crucial to prevent sticking. If you have a cooling rack let the waffles cool on the rack for 5 minutes to enhance crisp.
  • Serve waffles with your favorite toppings, I went with an fried egg, avocado, sriracha and cilantro.

Notes

*I roasted mine at 425 for 45 minutes. I don't suggest boiling it as this will make the sweet potato too watery. You can prep the sweet potato ahead of time - I made mine the night before.
Because these waffles have cheese they may come out a little burnt looking, this is okay and helps them crisp up.
