3 Ingredient Sweet Potato Pancakes
Equipment
- 1 skillet
- 1 mixing bowl
- 1 measuring cups
Ingredients
Main ingredients
- ½ cup mashed + cooked sweet potato
- 2 eggs
- ½ teaspoon cinnamon
other ingredients
- 1 tablespoon butter or oil for cooking
Optional toppings
- almond butter
- greek yogurt
- maple syrup
Instructions
- Cook the sweet potato: I roasted mine at 400 degrees directly on the rack for about 45 minutes. Timing will vary depending on size of sweet potato. You can cook the sweet potato ahead of time, up to 3 days prior to making the pancakes
- Add all ingredients to a bowl and mix together until combined.
- Heat butter or oil in a skillet over medium heat. Add ¼ cup* of batter to the skillet and cook for 2 minutes, flip and cook for another 2 minutes. The pancakes will be golden brown once cooked. Repeat for every pancake that you make. This will make 4-6 pancakes.
- Serve pancakes with your favorite toppings and sides. I went with greek yogurt, almond butter and maple syrup.
