Vegan Mexican Stuffed Sweet Potato

- Bake your sweet potato.
- Mix together all stuffing ingredients.
- Top sweet potato with stuffing.
- That's it!
How many servings does this make?
This technically makes enough to stuff 2 sweet potatoes. However I made one sweet potato, stuffed it and ate the leftovers as a salad.

Ingredients

This makes enough to stuff 1-2 potatoes, so 2-4 servings
- 1 sweet potato - cut in half long ways (Make an additional potato if serving multiple people)
- 1 can black beans - drained
- 1 red onion - finely chopped
- 1 cup chopped cilantro
- 1 cup cooked corn
- 1 avocado - diced
- 1 heaping cup salsa
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp chili powder
Instructions
- Preheat oven to 425 degrees.
- Place the sweet potato halves face down on a sheet pan lined with parchment paper.
- Bake sweet potatoes for 30-35 minutes or until cooked through.
- Mix together black beans and all following ingredients.
- Top cooked sweet potato with black bean mixture. You will have some mixture left over if you only made one sweet potato. The leftover mixture can be eaten on its own as a salad.
