Beef Taco Skillet with Chipotle Yogurt Sauce

Ingredients
  

skillet

  • 1 tablespoon olive or avocado oil can also use butter or any neutral cooking oil
  • 1 small red onion
  • ½-1 jalapeno or serrano pepper - minced adjust to your spice preference
  • 4 cloves garlic - minced
  • 1 large bell pepper - sliced about 1 cup sliced peppers, i used mini bell pepper
  • 1 lb ground beef preferably 100% grass fed
  • 2 teaspoons cumin
  • 2 teaspoons chili powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon oregano
  • 1-1 ½ teaspoon salt
  • black pepper to taste
  • ~28 oz can crushed tomatoes
  • ½ cup cilantro - finely chopped
  • 1 can black beans - drained
  • 1 - 1 ½ cups grated cheddar cheese adjust to your cheesiness preference

Optional toppings and sides

  • avocado
  • additional fresh chopped cilantro

Instructions
 

  • Add all chipotle yogurt ingredients to a food processor or blender and blend until smooth. Set aside.
  • Add oil to a skillet over medium heat. Add onion, bell pepper, jalapeno and garlic. Cook for 3 minutes. Add ground beef and seasonings. Cook for about 5 minutes until the ground beef is browned.
  • Add all remaining ingredients to the skillet except for the cheese. Bring to a simmer and cook for 10-15 more minutes. Turn off heat and top with cheese.
  • Turn on the broiler to the oven and add the skillet to the oven. Cook for 3-5 minutes, until cheese is bubbly.
  • Top skillet with yogurt sauce and cilantro (if using). Divide out and serve with chips and avocado (if using).

Notes

*You can freeze the leftover peppers and defrost them as you need them to prevent food waste.
This recipe makes 5-6 servings, depending on how hungry you are.
You might have leftover sauce, it taste great with almost anything else including fries, veggies, salmon etc.
