No, you need the yogurt to make these oats creamy.
I don’t recommend omitting the protein powder because it will affect both the texture and flavor. If you do leave it out, add 1 tablespoon of maple syrup and ½ teaspoon of vanilla extract to make up for the sweetness and flavor.
I like to top my chia pudding with cacao nibs, more fruit and bee pollen.
You can use a thick vegan yogurt and dairy-free milk, but keep in mind that the oats won’t be quite as creamy and the protein content will be significantly lower.
Dates yield a natural caramel flavor.
Recipe Pro-Tips
Use a good tasting protein powder for the best tasting chia pudding. My favorite whey proteins are Ballerina Farms and Mind Body Green.
I recommend using whey protein for the best consistency. Plant-based protein tends to absorb more liquid, so if you use it, you’ll need to add extra milk.

Caramel Apple Overnight Oats (high protein)
Equipment
Ingredients
- 1 tablespoon butter
- 1 medium-large apple - diced
- 2 dates - finely chopped
- ½ teaspoon cinnamon divided
- ½ teaspoon cardamom divided - can omit but I love the flavor
- tiny pinch salt
- 1 cup rolled oats
- 2 tablespoons chia seeds
- ½ cup milk of choice I like whole milk for more protein
- 1 cup greek yogurt
- 2 servings vanilla protein powder I recommend whey protein*
Instructions
- Heat butter in a skillet over medium heat. Add apples, dates and half of the cinnamon and cardamom. Cook for about 10 minutes until apples have softened.
- Add apples and dates to a mixing bowl along with the rest of the ingredients including the rest of the cardamom and cinnamon. Mix until fully combined.
- Cover and refrigerate oats for at least 3 hours, or overnight. Serve and enjoy.
