Ingredients
  

  • 1 tablespoon butter can sub in olive oil but I love the flavor butter adds
  • 1 medium-large apple - diced
  • 2 dates - finely chopped
  • ½ teaspoon cinnamon divided
  • ½ teaspoon cardamom divided - can omit but I love the flavor
  • tiny pinch salt
  • 1 cup rolled oats
  • 2 tablespoons chia seeds
  • ½ cup milk of choice I like whole milk for more protein
  • 1 cup greek yogurt
  • 2 servings vanilla protein powder I recommend whey protein*

Instructions
 

  • Heat butter in a skillet over medium heat. Add apples, dates and half of the cinnamon and cardamom. Cook for about 10 minutes until apples have softened.
  • Add apples and dates to a mixing bowl along with the rest of the ingredients including the rest of the cardamom and cinnamon. Mix until fully combined.
  • Cover and refrigerate oats for at least 3 hours, or overnight. Serve and enjoy.

Notes

*vegan protein absorbs more water so if you use this you will need to add more liquid.
