Mediterranean Chickpea Chopped Salad with Harissa Vinaigrette
Ingredients
salad ingredients
- 2 cans chickpeas - drained
- 1 cucumber - diced
- 1 orange bell pepper - finely chopped
- 1 cup finely chopped parsley
- 1 clamshell tomatoes - quarted
- ½ cup roughly chopped pistachios
- 5 oz block feta - crumbled
- additional salt/pepper to taste optional
Instructions
- Add all dressing ingredients to a jar or bowl and mix until smooth.
- Add all salad ingredients to a bowl and toss together with dressing. Serve and enjoy.
