This summer farro salad with apple cider vinaigrette is a delicious farro salad recipe.

Ingredients
  

  • This makes 3-4 servings of salad
  • Salad
  • 1 cucumber - diced
  • 1 red bell pepper - diced
  • 1 8 oz container of cherry tomatoes - roughly chopped
  • 1 bunch mint - finely chopped
  • 2 cups cooked farro
  • 1 can chickpeas - drained
  • 1 cup pumpkin seeds
  • salt/pepper to taste
  • Dressing
  • cup olive oil
  • ¼ cup apple cider vinegar
  • 1 teaspoon dijon mustard
  • 1 tablespoon maple syrup
  • juice from ½ lemon
  • 2 garlic cloves - minced
  • salt/pepper to taste

Instructions
 

  • Mix together salad dressing and set aside.
  • Pour all salad ingredients into a large bowl and mix with dressing.
