Carrot quinoa fritters with cashew aioli
Ingredients
- Fritters
- 2 cups shredded carrots
- 3 scallions - finely chopped
- ½ cup basil - finely chopped
- 1 cup quinoa
- ½ cup panko bread crumbs use gluten free if needed
- 1 tablespoon nutritional yeast
- 1 teaspoon salt
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- black pepper to taste
- 2 eggs
- Cashew Aioli optional
- 1 cup cashews soaked for 4 hours or 15 minutes in very hot water if you don't have a high powered blender
- ½ cup water
- 2 cloves garlic
- 1 teaspoon mustard
- black pepper to taste
- ¼-1/2 teaspoon salt to taste
- juice from 1 lemon
- 1 tablespoon nutritional yeast
Instructions
- Preheat oven to 425 degrees.
- Add all fritter ingredients to a bowl and mix to combine.
- Form 9-10 evenly sized fritters (using 3-4 tablespoons of dough) on a sheet pan lined with parchment paper.
- Bake fritters for 30-35 minutes, flipping once halfway through.
- Add all aioli ingredients to a blender and blend until smooth.
- Serve fritters with aioli and your favorite protein or salad.
