I was feeling a little uninspired lately with my recipes, so I was so happy when the idea for these Roasted Crispy White Bean and Veggie Pitas with Parsley Sauce (vegan) came into my head. These pitas are seriously so good and easy to make. I will be making this recipe again and again.

What do I need to make white bean veggie pitas?

Are pitas vegan?

99% of pitas are vegan. Just double check the ingredients before you buy. I think the Ezekial pitas are amazing and they are whole grain. You can find them in the freezer section.

What food processor do I use?

I love my Cuisinart food processor. I have had it for years and it works great.

Ingredients

Filling

  • 1 can white beans - drained and patted dry
  • 1 red bell pepper - roughly sliced
  • 1 8 oz container sungold or regular cherry tomatoes
  • 1 tbsp oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder

Sauce

  • 1 bunch parsley
  • 1 shallot
  • juice from 1 lemon
  • 1/3 cup olive oil
  • 1 tbsp apple cider vinegar
  • pinch salt/pepper
  • 1 tsp maple syrup or honey

+1 cup fresh chopped lettuce and 2-4 tbsp tahini for topping (optional)

+ 2-4 warm pitas (depending on size of pita) - I like Ezekial

Instructions

  1. Preheat oven to 425 degrees.
  2. Add white beans, bell pepper, and tomatoes to a sheet pan lined with parchment paper. Toss with oil and spices. Roast for 30-35 minutes.
  3. Add all sauce ingredients to a blender or processor. Blend until smooth. If you don't have a blender you can finely chop everything and mix it.
  4. Top warm pita with veggies and sauce. Add fresh chopped lettuce and a drizzle of tahini if using.
