Spicy Buffalo Lentil Burrito / Wrap (Vegan)

I am on a big wrap and burrito kick right now. There is something about a flavorful filling tucked into a crispy wrap. Yum. This Spicy Buffalo Lentil Burrito / Wrap (Vegan) is my latest wrap recipe and it is so good. Let's get into the recipe.

What do I need to make a spicy buffalo lentil wrap?

  • lentils
  • green bell pepper
  • scallions
  • cumin
  • paprika
  • hot sauce
  • tahini
  • lemon
  • soy sauce
  • avocado (optional)
  • sliced tomato (optional)

How do I store the leftovers?

This wrap will get soggy if you leave it. So I recommend only making the amount of wraps you plan on eating that moment and storing the leftover filling on its own.

Ingredients
  

  • This makes enough for 2 wraps
  • Filling
  • 1 ½ cups cooked lentils can used canned, I cooked my own from dry in my instant pot
  • 1 medium green bell pepper - diced
  • 1 bunch scallions - finely chopped with ends removed
  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • pinch salt/pepper
  • Buffalo sauce
  • ¼ cup hot sauce
  • 1 ½ tablespoon tahini
  • juice from ½ lemon
  • 1 tablespoon soy sauce
  • Optional toppings
  • avocado ¼ avocado per wrap
  • sliced tomato

Instructions
 

  • Mix together filling and set aside.
  • Mix together buffalo sauce. Pour over filling and mix again.
  • Add ½ of lentil filling to a warmed wrap/burrito shell* and top with avocado and tomato if using. Roll burrito style. If you would like the wrap crispy, air fry at 400 for 5 minutes or bake at 425 for 10-15 minutes on a lined sheet pan. Repeat for each burrito you are making. I recommend making only the amount of burritos you plan on eating in that moment as the wrap will get soggy.

*I microwave my wraps for 30 seconds each in the microwave so they are easier to roll
