Vegan Tahini Oat Flour Blondies (gluten free)

If you had to choose, would you go with blondies or brownies? I love both, but I definitely gravitate towards chocolate chip blondies! Making healthy and vegan blondies is no small task. These vegan tahini oat flour blondies (gluten free) are probably my favorite blondie recipe ever!

They're gooey and have an amazing texture despite being made with oat flour. Sometimes oat flour recipes come out crumbly, but the combination of tahini and apple sauce give these blondies the best texture. The combination of maple syrup and coconut sugar make this recipe refined sugar free, and also contribute to the gooey texture. This recipe is also made in one bowl, so it's super easy! All together you can have a dessert in less than 30 minutes, and with minimal cleanup.

Ingredients

Wet

  • 1/2 cup DRIPPY tahini* (peanut butter would also probably work)
  • 1/3 cup applesauce
  • 1/4 cup + 2 tbsp coconut sugar
  • 1/4 cup maple syrup
  • 2 tbsp plant milk
  • 2 tsp vanilla extract

Dry

  • 1 1/2 cups oat flour
  • 1 1/2 tsp baking powder

+ 1 cup chocolate chips

Instructions

  1. Preheat oven to 350 degrees.
  2. In a bowl whisk together your wet ingredients. Pour in dry ingredients and mix until just combined. Lastly fold in chocolate chips.
  3. Pour batter into a lined 8x8 baking dish. Bake for 22-25 minutes.
  4. Let blondies cool for at least 1 hour so they can set.

Notes

*If your nut butter is super thick add a few tablespoons of melted oil
