Whenever I want a super easy dinner, pesto it is! Pesto pasta takes about 10 minutes to make and it is still packed with veggies and antioxidants from the garlic and herbs. Personally, although I love basil I do prefer parsley pesto because I love parsley! This Vegan Parsley Pesto without Nuts is one of my favorite pesto recipes.

I was never actually able to have pesto going up because I have a tree nut allergy.  But, I have made this pesto for people who agree it tastes like regular pesto! Hemp seeds are the star of this sauce, even if you are not allergic to pine nuts hemp seeds are still an awesome alternative because they are so much cheaper! Hemp seeds are also packed with plant based protein and vitamins like magnesium and calcium. The vegan cheese part of this pesto comes from nutritional yeast. Nutritional yeast is another nutritional powerhouse and a favorite of mine for flavor.

Ingredients

  • 1/2 cup hemp seeds
  • 1/3 cup olive oil
  • 1/4 cup nutritional yeast
  • 1 garlic clove
  • 1 bunch parsley
  • juice from 1/2 lemon
  • salt/pepper to taste

+ cooked pasta of choice

Instructions

  1. Add all ingredients to a blender or processor and blend until smooth, scraping down the sides if necessary.
  2. Toss pasta with pesto and serve.
