Out of all of the places I visited, Greece had the best food! Mediterranean food is always my go to, and I would consider my diet a mediterranean-esque vegan diet. The flavors always hit the spot and I love the emphasis on whole and fermented foods.

This Greek Vegan Nourish Bowl with Lentils is one of my go to dinners. I don't know how it took me so long to make up a recipe for them. This recipe is super easy to make and packed with all of the veggies and a gut healing sauce.

This recipe only requires a few ingredients, and is mostly made on a sheet pan. If you wanted to further expedite the recipe you could use pre cooked lentils. I personally cooked mine up quickly in the instant pot. I listed veggies  I normally use for my nourish bowls but you could sub out any that you like. For the sauce, I love coconut yogurt but any unsweetened yogurt would work.

This recipe has all you need in a plant based meal. The yogurt sauce pairs well with all of the fiber and is healing for you gut. Lentils provide protein.

This makes about 3 servings

Vegetables

  • 3 carrots (or 1 small squash) - roughly chopped
  • 2 cups baby bella or shitake mushrooms - halved
  • 12-14 brussel sprouts - halved and stems removed
  • 2 tsp italian or all purpose seasoning
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp black pepper

Sauce

  • 1/2 cup vegan yogurt
  • juice from 1/2 lemon
  • 1/4 cup dill - finely chopped (could sub parsley or basil)
  • 1/4 cup olive oil
  • 1 garlic clove - minced
  • salt/pepper to taste

Other Fillings

  • ~2 cups cooked lentils
  • 2-4 cups Arugula

Instructions

  1. Preheat oven to 400 degrees. Toss veggies in seasoning, salt/pepper and oil. Roast on a lined sheet pan for 35 to 40 minutes.
  2. Mix together your yogurt sauce in a small bowl.
  3. Once veggies are done cooking, mix together arugula, sauce, veggies and lentils.
