1 16ozbag of cooked edamameI cooked mine from frozen and shelled them myself
~1 cup chopped scallions
+ other toppings of choice like avocadored pepper flakes, etc
Instructions
Add green beans, bok choy and bell pepper to a sheet pan lined with parchment paper. Toss with oil, salt, pepper and garlic powder. Roast for 30 minutes.
Make your spicy mayo sauce by mixing together sauce ingredients. Set aside.
Prepare bowls with rice, edamame, vegetables, and sauce. Add any other toppings you desire.
