head cauliflower - finely chopped

cayenne

garlic powder
oil of choice
Sauce
½
cup
coconut or greek yogurt
could sub mayo

cloves
garlic - minced

tablespoon
olive oil

scallions - finely sliced

cup
parsley or cilantro - finely chopped
juice from ½ lime or lemon

apple cider vinegar

small jalapeno - finely chopped with seeds removed

mustard

turmeric

use less salt if using mayo

hemp seeds - optional for protein
Other ingredients

bread of choice

sliced avocado
Instructions
Preheat oven to 425 degrees.
Toss the cauliflower in oil and spices . Roast for 40 minutes.
While cauliflower is cooking prepare the sauce by mixing together all ingredients in a small bowl.
Once cauliflower is done cooking let cool for about 10 minutes and then toss in sauce. This can be served immediately or stored for 1-2 days.
Serve on toasted bread with mashed avocado + any other condiments you please.
Notes
This makes enough for 2-3 sandwiches. It also tastes great with crackers or on its own.
