Vanilla Cottage Cheese Chia Pudding

Ingredients
  

  • ½ cup + 2 tablespoons milk of choice I used almond
  • cup cottage cheese full fat is best but low fat also works
  • 3 tablespoons chia seeds
  • 1 tablespoon maple syrup
  • ½ teaspoon vanilla extract

Instructions
 

  • Add cottage cheese and milk to a blender. Blend until smooth.
  • Add chia seeds, cottage cheese mixture, vanilla and maple syrup to a bowl or jar. Mix until combined.
  • Add chia pudding to the refrigerator and let set for at least one hour or overnight. For best results stir the chia pudding again after 5 minutes.
  • Serve chia pudding with your favorite toppings and dig in.

Notes

This makes 1 serving of chia pudding.
If you want to add protein powder to this recipe do this at the end after the pudding is set and add extra milk.
